Strawberry Ice Cream Cake

Christy from @sweetenedwithdates who created this Pineapple Dragon Smoothie, once again delivers a yummy treat that is both wonderful and refreshing to close out the warm months.

Strawberry Ice Cream Cake

Crust Ingredients
Basic Oat Crust/Cookie
1 Cup rolled oats
1/2 C pumpkin seeds
10 medjool dates
3 T Maple syrup
1/2 t vanilla powder

Filling ingredients
2 bananas, frozen
2 C strawberries, frozen
1/4 C coconut cream or oat cream
1 t vanilla powder/extract
1t maca (optional)

Soak dates in hot water for 5-10 min.

Add oats and seeds to food processor and pulse until coarsely ground. Add dates , vanilla, and syrup and mix until sticky.

Press crust dough into a mini tart pan and place in the freezer while you make the filling.

For the filling, place all ingredients into a high-powered blender or food processor. Mix until thick and creamy. Add filling to crust. Place in freezer to set for at least three hours.

Decorate with fresh fruit if deserted. Enjoy.
