2 C Yukon gold potatoes, chopped
1 carrot, chopped
1/2 onion, chopped
1 T lemon juice
2 cloves garlic
1/2 t turmeric
1/2 t black pepper
3/4 t smoked paprika
1/2 t arbol chile powder or 1/2 t chipotle powder
1 t salt
1/4-1/2 C sunflower seeds, raw
3/4 C water (reserved from boiling vegetables)
Boil potatoes, carrot, and onion until soft.
Add the potatoes, carrots, and onion to a high speed blender. Add the rest of the ingredients and mix until very creamy.
